buildTouchStateMachine methods and overriding them

What behavior methods are available to me? I am looking at This is the multi-touch picture example. I am specifically interested in the drag feature. I am looking to drag a picture, and detect if it is placed on top of another picture. I plan to do this because I will know all pictures origin and bounds. What can I do with the buildTouchStateMachineMethod? I tried implementing an onTouchEnded (because in the tutorial this is the method where I can access the mouse/fingers x and y coordinates) in addition to the onPhotoViewChanged method, and my pictures just continue to grow really large when the touch ends. I would like to override some of the features of the example's current implementation, but need some help getting started.
